As you probably know I love to bake and share. Today I had to do some baking practice (oh feel so sorry for my family would ya! LOL) What? You have never heard of baking practice? Well, Saturday my Mother-In-Law reminded me that I was on the "list" to bring pies to Thanksgiving dinner. No it wasn't a surprise because I usually do but it reminded me that the last 2 years my Pecan Pie was, well let me say, less than pretty. They got eaten but I wasn't happy with how runny they were. So I did some Pecan Pie practice baking, our electrician is supposed to stop by and I know he LOVES Pecan Pie, so it won't go to waste just to waist! Oh I crack myself up!
Here is what it looks like now. I won't know if it's runny or not until this evening when they cut it but it looks pretty good so far dontcha think?
Here's a close up. Yes, the crust is not homemade because it's not the crust I am concerned about only the filling and I had these in the freezer so I wanted to use them up. Don't flame me for using frozen crusts...they are good Pillsbury ones! ;-)
My baby's 11th birthday is this week she will be 11 on the 11th in the 11th month. We called it not her Golden Birthday but her Platinum birthday since it's in the 11th month too. Not everyone can say that (no one in my family anyway) Well, she also loves baking and sharing like her Mama. Last month was her best girlfriends 11th birthday and so she wanted to make her one of her favorites. Carmel Corn! My daughter has the best recipe and makes it in a jiffy in the microwave! Yep the microwave even a child can make it without worrying about getting burnt.

You make it in a paper-bag. Yep a little grease but you get to throw that bag away! And no hour of stirring every 15 minutes for an hour in the oven anymore. And it's so delicious.
When it was all done we packaged it up in Stampin' Up! cello bags with cute little tags to celebrate Cheyenne's Birthday. I didn't get a picture before we were headed out the door to deliver it! What was I thinking? I'll try to get her to make another batch soon!
Here is Abby's recipe for Paper Bag Microwave Popcorn
1 Cup Packed Brown Sugar
1 Stick of Butter (only butter)
1/2 tsp salt
1/4 Cup Light Corn Syrup
Combine above ingredients, microwave 2 minutes on full power in a microwavable measuring cup. Stir well. Add 1/2 tsp baking soda. Put 8 Cups or 2 bags of Microwave popcorn in a brown grocery sack. Add syrup and shake.
Put in Microwave on Full Power for 1 1/2 minutes Take out and shake
Microwave for another 1 1/2 minutes then shake
then 1/2 minute on full power and shake. Pour into 13 x 9 pan and cool. Stirring occasionally. This the recipe we have used for years but found with our new "high powered" microwave we had to cut down on the times a little so the popcorn didn't have a burnt taste. I think we did 1 minute, 1 minute then 30 seconds.
