Since I posted about the Perfect Chocolate Chip cookie a few days ago here I have had requests to find the perfect Oatmeal cookie. I have up to this point been very happy with the recipe on the top of the Quaker Oats container for "Vanishing Oatmeal Raisin Cookies". I usually changed the raisins to Craisins because that is what my husband likes but my biggest complaint is they are kinda thin and often break even though they are very delicious.
So while searching online I found a blog called the smittenkitchen and thick, chewy oatmeal raisin cookies. While these cookies were good the reviews in my home were varied. Don't get me wrong no one in the family took a bite and spit it out or put the cookie down and most ate more than one. LOL My husband gave them a thumbs up which meant the most to me because this is his favorite cookie hands down. My concern was although it was good and thick and chewy it didn't have that melt in your mouth taste that the vanishing cookies have. So my plan is to combine the best of both and see What I can come up with next week during another spare minute. The trick I learned with these cookies is that you need to chill the dough before baking. That helps the cookie hold it's form. So I am going to keep with my craisins and try chilling the dough and see what happens.
